  • 2 pork tenderloins
  • 2 onions
  • 2 cloves of garlic
  • 400 g of mushrooms
  • 1 zucchini
  • 300 ml of beer

  • extra virgin olive oil

How to make the Pork Tenderloin with Mushroom Sauce

  • Cut the tenderloins in half and salt and pepper them. Then cook them in a large saucepan with a tablespoon of oil. Reserve the tenderloins on a plate.
  • Scoop out the zucchini into balls (with the help of a ball punch) or cut the zucchini into small squares (without skin) and steam them for 5 minutes. Season and reserve them.
  • Peel and chop the garlic and spring onions and poach everything in the saucepan where you have cooked the sirloin. Reserve half of the mushrooms and the other half, clean and chop them to add them to the saucepan next.
  • Pour the beer and bring it to a boil for a few minutes so that the alcohol goes away. Add the juice released by the sirloins and the meat stew tablet. Then, let the sauce reduce for about 15 minutes and blend it with a food mill or blender.
  • Pour the sauce into an oven-safe dish, add the fillets and the courgette balls, and heat everything in the oven for a few minutes.
  • Cook the rest of the mushrooms in a pan with a tablespoon of oil. Season and sprinkle with chopped parsley. Serve the meat, pour the sauce on top and accompany it with the mushrooms and the courgette balls.
